Ratatouille, a classic French dish celebrated by the Disney cartoon, uses the fresh organic vegetables growing in your backyard garden or at your local Farmers Market. Steam 2 sliced zucchinis, 1 small cubed eggplant, 2 sliced white mushrooms, and finely chopped red, yellow, orange, green baby bell peppers to al dente. Saute 2 minced garlic cloves and ½ finely chopped red onion in 3 tbsp extra virgin olive oil in a large pan 7-10 minutes on low heat. Add 3 chopped small tomatoes and cook 3 more minutes. Pour in steamed veggies, mix 1 tsp sea salt and pinch cayenne pepper. Stir in 1 tbsp chopped fresh basil, ½ tsp each chopped fresh oregano, rosemary, thyme, and sage and let cool. Kids like it served in a cooked and cooled organic whole wheat pie shell, sprinkled with shredded cheese, serves 6.
