Babies love avocados, which are easily digested, heart and brain healthy, and are rich in fiber, vitamin E, potassium, plus other vitamins and minerals. Avocados are usually found smashed with spices in guacamole and served with chips, but are also delicious sliced in salads, sandwiches, and other dishes. There are many varieties of avocados, some more watery than others. The buttery consistency of a Haas or Fuertes avocado is most sought after for guacamole. Kids like avocado sandwiches for school, home or picnics. Take two slices of fresh organic whole grain bread and spread both with sour cream. On one side add organic lettuce, spinach or kale and 1 slice of a large organic tomato and sprinkle with sea salt. On the other piece of bread, kids can add mustard and thinly slice their favorite cheese, top with 1/3 sliced Haas avocado, sprinkle with sea salt, put the sandwich together and enjoy.
