IMG_1085

High fiber foods, like black beans are filling so overweight kids eat less but still feel satisfied. Black beans are high in protein, regulating blood sugar, lowering cholesterol, and offering special support for the digestive track. The abundant soluble fiber in black beans stabilizes blood sugar to help control weight issues. Black beans are high in antioxidants and omega-3, low in fat, with energy producing carbohydrates. Black beans are even more delicious and nutritious cooked from scratch. Kid Chefs can soak ½ cup of organic black beans overnight. Drain, rinse, put in clean pot with 2 cups water and two minced garlic cloves and cook 45 minutes. Add 1 carrot, 1 celery stick, 1 slice red onion, ¼ red pepper, sea salt, pepper, cayenne pepper, and cumin and simmer 20 minutes more. Kids like these yummy black beans with rice, in salsa, blended as a spread, and in a burrito.
