Kid Chefs can make this healthy Greek Salad. One reason the Mediterranean diet is so healthy is that people have been eating fresh from the garden salads with their meals for thousands of years. The classic Greek Salad is 4 medium ripe tomatoes, 2 cucumbers, an onion, 1 green bell pepper, 1 medium head of romaine lettuce, 8 oz feta cheese, 1 tsp dried oregano, 1/3 c extra virgin olive oil, 1 tbsp red wine vinegar, ½ tsp salt, pepper, and 12 Kalamata olives served family style. Kid Chefs can make another version using organic ingredients and mixing ½ cup sliced cherry tomatoes, ½ cup chopped cucumber, 2 green onions, 1 minced garlic clove, 1 tbsp extra virgin olive oil, 1 tsp balsamic vinegar in a small bowl and put in the refrigerator for a half hour. In another small bowl, crumble 8 oz organic feta cheese, 2 tbsp sundried tomatoes, ½ tsp oregano, ½ tsp basil, ¼ tsp rosemary, ½ tsp sea salt, and dash of pepper and stir. To serve four, kid chefs can cover the bottom of each salad plate with fresh organic salad greens, spoon on ¼ of the tomato-cucumber mixture, sprinkle with ¼ of the seasoned feta cheese, and add 3 Kalamata olives.
