Kids love burritos. Parents who have fussy eaters and Kid Chefs can make this healthy burrito to add veggies unobtrusively to their diets. A healthy burrito is good for overweight kids too. Organic whole wheat tortillas and brown rice are healthy whole grains. Beans are loaded with protein and fiber. Kid Chefs can soak ½ cup of organic pinto beans overnight in a pot of water to make four burritos. The next day, rinse and drain the pinto beans and pour back into the pot with 1 ½ cups of boiling water, and simmer 30 minutes. Using organic ingredients add to the pot a thick slice of red onion, 2 minced cloves of garlic, sea salt, return to a boil and simmer another 25 minutes. In another pot, Kid Chefs can put ½ cup brown rice in 1 ¼ cups of water and ½ tbsp butter, bring to a boil, and simmer 25 minutes. Add organic veggies, 1 chopped carrot, 1 cup chopped broccoli, 1 slice minced red onion, 1 clove minced garlic to the rice and simmer 20 more minutes. Kid Chefs can toast an organic whole wheat tortilla sprinkled with ¼ cup shredded organic pepper jack cheese in a 350 degree oven for 6 minutes. On the center of the tortilla put some of the brown rice mixture and top with the beans, and fold the tortilla ends in and fold the sides together.
