A colorful dish for the holiday table can be the stuffing/dressing casserole with a rainbow of veggies. Using all organic ingredients, Kid Chefs can make this dish the day before the celebration as the flavors get better overnight. Kids can steam 2 chopped carrots, ¼ red bell pepper, ¼ cup chopped cauliflower, ¼ cup chopped broccoli, 7 sliced mushrooms, 2 slices of chopped red onion, and one minced garlic clove. In a casserole dish boil 1 ¾ cup of organic vegetable broth and 6 tablespoons organic butter. Remove from heat and stir in a package of organic vegan stuffing mix cover for 5 minutes. Add the steamed vegetables and mix well. Cut with scissors fresh from the garden parsley, rosemary, sage, thyme, oregano, chives, and basil and mix into the casserole. Bake at 350 degrees for 20 minutes, let cool, and store in the refrigerator overnight. Before serving, brush the top with butter and bake at 350 degrees for 20 minutes or until the top is browned and crisp.
