Kid Chef Maple Roasted Yams

Yams are thought to be one of the first foods to be cultivated by humans. Kids can find a good source of energy with yams. Native to Africa and Asia, yams are high in antioxidants, potassium, beta carotene, fiber, vitamins and minerals. Kids can peel and chop into 1” chunks two local organic yams and spread on a baking sheet. Sprinkle ¼ cup of organic pecans, ½ tsp sea salt, ¼ tsp ground nutmeg, 1/8 tsp ground ginger over the yams. Melt 2 tbsp organic butter, ¼ cup maple syrup, 1 tsp fresh squeezed orange juice, and ¼ tsp orange zest and pour over the top of the yams. Bake in preheated oven at 350 degrees for 30 minutes.
