Kid Chef Roasted Potatoes


Kids love potatoes, especially French Fries, which have the skins removed and are fried in oil. Roasting organic potatoes is a healthy alternative. Kids can eat the skins, which are rich in vitamins and minerals, as they were produced without harmful chemicals. Preheat the oven to 400 degrees. Wash 2 organic baking potatoes, keeping the skins on, and slice thin lengthwise pieces. Mix the potatoes with 2 tsp organic extra virgin olive oil and ¼ tsp sea salt, spread one layer thick on a baking dish, and cook for 15 minutes. Using all organic ingredients, kids can cut 4 thin slices red onion in half, mince 1 garlic clove, slice ½ green bell pepper into thin strips, and slice 8 small mushrooms. Mix the veggies with 1 tsp extra virgin olive oil, ¼ tsp sea salt, and finely cut fresh from the garden sprigs of parsley, oregano, rosemary, sage, and thyme. Put the veggies on a separate baking sheet. When the timer rings, take the potatoes out of the oven, using an oven mitt and a spatula to flip the potatoes over, browning the other side. Put the potatoes back in the oven with the veggie pan and cook 15 more minutes. Take the potatoes out of the oven with the oven mitt and spatula and serve them with the herbs and veggies on top.
