Kid Chefs can make this treat for a special occasion or party. Preheat oven to 350 degrees. Kids can line and cover the sides of an 8 inch square pan with parchment and lightly grease. Mix ½ cup organic butter, 1 ½ cups organic whole wheat pastry flour, ¼ tsp sea salt, and 1/3 cup organic sugar with your fingers until crumbly. Press into the pan and bake for 25 minutes and let cool. Toast ½ cup roughly chopped organic pecans and ½ cup organic shredded coconut 3-4 minutes in the oven. In a saucepan, kids can mix ¼ cup maple syrup, ¼ cup of agave syrup, ½ cup organic sugar, and 4 tbsp coconut oil and bring to a boil. Stir the mixture carefully as the searing hot mixture bubbles and use an oven mitt. Reduce heat and simmer another 5 minutes. Remove from heat. Stir 1 tsp pure vanilla extract, pecans, and coconut into the sugar mixture. Pour the filling over the crust and let cool, then chill in the refrigerator overnight. The next day lift the parchment paper to get the pecan bars out of the pan. Cut into 16 squares.
