Kids love coconut with its tropical flavor and high energy health benefits flavoring this Asian inspired vegan noodle bowl. Organic coconut milk is a rich liquid produced from grating and pressing fresh coconut meat. Kids can use it in many recipes for a creamy addition to soups, stews, curries, beverages, and baked goods. Shiitake mushrooms are rich in B vitamins and antioxidants and have been used medicinally in China for 6,000 years for their immune system support. Organic shitake mushrooms can be found in the frozen food section of most grocery stores, if fresh ones are not available. Eggplant is a brain food for kids with potent phytonutrients in its skin. Using all organic ingredients, kids can steam ½ cup of chopped red onions, one small cubed eggplant, and 6 oz sliced shitake mushrooms. Pour ½ cup organic culinary coconut milk, a strained can of organic diced roasted tomatoes, 3 tbsp organic ginger soy sauce, ½ tsp cumin, ½ tsp coriander, ½ tsp sea salt, and ¼ tsp cinnamon into a separate pot, add the steamed veggies, and simmer 5 minutes.
