Kid Chef Rainbow Salad


Kids can grow a rainbow salad in a container garden, by planting different color veggies. Rainbows of brightly colored fruits and veggies are powerful boosts of energy and the magic secret for all around health. Nutritionists encourage kids to eat a variety of different color fruits and veggies, as each vivid color is a different spectrum of photochemical nutrients and antioxidants to support a healthy diet. Cabbage has been known for thousands of years as a miracle food for good health. Cabbage improves digestion, detoxifies the stomach and upper colon, kills bacteria and viruses, and stimulates the immune system. Using all organic fresh from the garden ingredients, kids can dice 1 cup red cabbage, ½ cup celery, ½ cup tomatoes, ½ cup cucumber, ¼ cup green pepper, and put them in a large bowl. Grate ½ cup carrots and mince ¼ cup red onion and add to the bowl. In a small bowl mash ½ ripe avocado, add ½ tsp tahini, 3 tbsp olive oil, 1 tsp lemon juice, ½ tsp sea salt, mix and dress the salad.
