Kids in Asia have been eating nectarines, which are closely related to peaches, for hundreds of years. Nectarines are rich in antioxidants, electrolytes, vitamins, and minerals, protecting the eyes and skin. Ginger is often used to treat various stomach complaints, such as motion sickness, upset stomach, diarrhea, or gas. It has been proven more effective than over the counter medicines for these symptoms. When nectarines are ripe on the tree, kids can make this delightful treat. Wash 3 ripe organic nectarines, slice thinly and cut in half, and place in a 6.5” x 6.5” casserole dish. Cut ½ inch piece of fresh organic ginger root, peel, mince, and add it to the nectarines. Sprinkle 1 tbsp organic cane sugar and 2 tbsp maple syrup over the fruit and mix gently. Preheat the oven 350 degrees. In a small bowl mix ½ cup organic whole wheat flour, ½ cup organic old fashioned rolled oats, 1 tsp baking power, and ¼ tsp cinnamon. Add 4 tbsp organic extra virgin coconut oil and mix thoroughly to make crumbs. Spread the crumbs over the nectarines. Bake 30 minutes and cool 15 minutes.
