Kids Stuffed Mushroom Caps

Kids can make an out of this world brain power mushroom snack for a Star Wars birthday party. Mushrooms are fungi that grow in the shade of trees and plants. Mushrooms are low in fat, containing protein, potassium, and vitamin D. Kids can wash the mushrooms with a wet paper towel and carefully remove the mushroom stalks from 25 organic crimini mushrooms making a slight depression in the center for stuffing. Steam the mushrooms, 2 small chopped organic red potatoes, 1 minced organic garlic clove, 1/3 cup organic green peas, and 2 tbsp finely chopped organic red onion. In a bowl marinate the mushrooms in 2 tbsp organic soy sauce and ½ tsp fresh grated organic ginger. Kids can mash the potatoes with ¼ cup organic almond milk, 1 tbsp organic extra virgin olive oil, ½ tsp curry powder, 1 tbsp nutritional yeast, and ½ tsp sea salt. Mix in the garlic, peas, and onion. Sprinkle the mushrooms with 1 tbsp finely cut fresh organic chives and stuff them with the potato pea mixture. Kids can arrange the mushroom caps on a serving plate for an awesome energy packed snack.
