Kid Chef Cauliflower Pasta

IMG_2992

When kids plant organic cauliflower in their garden in the fall, it will be ready to harvest in winter. Cauliflower is a lovely winter veggie in the cabbage family with abundant health benefits in its antioxidant and anti-inflammatory nutrients. Kids can cut the cauliflower off its stem in the center of the plant and several new cauliflowers will grow in its place. Kids can steam 1 ½ cups of chopped organic cauliflower, 2 tbsp minced organic red onion, 1 minced garlic clove. Stir the cooked veggies in 1 tsp organic extra virgin coconut oil and sea salt. Kids can salt boiling water and cook 1 ½ cups of colorful organic pasta. Fresh herbs from the garden add flavor and nutrition. Kids can finely cut leaves of basil, rosemary, oregano, thyme, and sage. Heat a can of organic chopped tomatoes in a saucepan and mix in the herbs, veggies, and pasta. Kids can make this quick and easy dish for a snack or a healthy meal for the whole family.
