When kids cook with a rainbow of veggies, each color gives them a different spectrum of photochemical nutrients and antioxidants that provide different vitamins and minerals. By using organic tricolor quinoa with white, red and black seeds, kids have a rainbow of healthy gluten free nutrients. All the essential amino acids are found in the super food quinoa, a complete protein, with iron, magnesium, potassium, and fiber. Kids can cook quinoa quick and easy by bringing ½ cup organic tri-color quinoa to a boil and simmer 20 minutes, remove from heat, add 1 tbsp organic extra virgin olive oil and fluff with fork. Steam 1 chopped organic red potato, 1 chopped organic carrot, ¼ cup frozen organic peas, ¼ organic red pepper chopped, 3 sliced crimini mushrooms, 2 tbsp minced organic red onion, and 1 minced garlic clove. Mix steamed veggies with the cooked quinoa and add ¼ tsp sea salt, 1/8 tsp cumin, and 1 tbsp organic extra virgin olive oil.
