Kids can bake these brain power filled muffins for breakfast or a lunch box snack. Preheat the oven at 400 degrees. Kids can measure 1 cup organic whole wheat pastry flour, 1 cup organic cornmeal, ¼ cup organic sugar, 2 tsp baking powder, 1 tsp baking soda, ½ tsp sea salt into a large bowl and mix. Chop ½ cup or 4 large organic Medjool dates and ¼ cup organic walnuts, adding them separately to coat with the dry ingredients. Kids can melt 3 tbsp organic extra virgin coconut oil in a sauce pan. Pour the coconut oil into a small bowl and add 6 oz organic soy yogurt, ¼ cup organic plain almond milk, 2 tbsp organic maple syrup, and ½ cup organic canola oil. Mix the wet ingredients into the dry ingredients and stir. Line a 12 muffin pan with cupcake liners and pour the batter equally. Bake in the oven for 25 minutes and let cool.
