Kids can create fun Brain Power Cups for a fun nutritious meal filled with protein, fiber, vitamins and minerals. Kids can wash ½ cup of organic green lentils and cook them with two cups of water for 40 minutes. After simmering the lentils for 15 minutes add 1 cup chopped organic mushrooms, ½ cup chopped organic red onion, 1 minced organic garlic clove, and ¼ cup chopped organic red pepper. Strain the broth from the lentil mixture, return to the pan, and add two cubed slices of toasted old bread, 1 tbsp organic extra virgin olive oil, ½ tsp sea salt, ¼ tsp cumin, and ¼ tsp curry powder. Steam one large chopped organic yellow potato and mash with 3 tbsp organic soy yogurt, and ¼ tsp sea salt. Place six cupcake holders in a cupcake pan. Fill the holders with the lentil mixture and spoon the mashed potato on top. Grate 1 organic carrot and sprinkle over the potato topping. Kids can reheat left over Power Cups in a 350 degree oven for 10 minutes.
