Kid Chef Pickled Beets

Kids can make pickled beets to add zing to their salads and to preserve excess beets from their organic container garden. Kids can rough chop 3 organic medium beets to make up 4 cups of beets and add to the steamer with 2 sliced organic carrots, 2 organic garlic cloves, and ¼ cup sliced red onion and steam until tender. Slice the beets, carrots, onion, and garlic and place them in two jars.  In a small pan, kids can bring to a boil ¾ cup organic apple cider vinegar, ¾ cup of beet steaming water, 2 sprigs of rosemary, 3 tbsp organic sugar, ¾ tsp sea salt, 1/8 tsp cayenne pepper. Pour these ingredients over the beets and cover the jars. Kids can keep their pickled beets in the refrigerator and serve them cold in a salad or as a garnish to a dish.
