Kid Chef Barley Pea Salad


Kids can make this bright summer salad with quick cooking organic grains rich in protein and fiber for playful energy. Kids can bring 1 cup Organic Barley, Pea, and Lentil mix to a boil and simmer 10 minutes. Kids with an organic herb and veggie patio garden can pick and chop fresh 1 tomato, 1 cucumber, 3 green onions, and several sprigs of parsley. Mix the barley, peas and lentils with the chopped veggies in a bowl. Kids can make a salad dressing with 3 tbsp organic extra virgin olive oil, 1 tbsp fresh organic lemon juice, 1 tsp lemon zest, and ½ tsp sea salt.  Refrigerate one hour or over night as the salad becomes more flavorful. Kid chefs can be a hit at picnics, barbecues, and potlucks with this delicious salad.
