Growing organic cucumbers is one of the joys of summer. In the spring, kids can sprout seeds or get organic starter plants at their local garden center. Kids in India have been eating cucumbers, members of the gourd family, for thousands of years. Cucumbers are a good source of vitamin A and C and are good for the skin. Kids can grow organic cucumbers after risk of frost has passed in a raised bed garden on a trellis that gives it support, keeps down disease, and saves space. There are many varieties of cucumbers, including ones for pickling and ones to eat raw. As cucumbers are mostly water, they do well with the drip watering system on a battery run timer. Kids can plant radishes and lettuces with them as they grow well together and provide a yummy salad. Jonathan is very proud of his cucumber harvest this year. When they are picked young, they are sweeter and don’t need peeling. When kids keep picking the small cucumbers, the plant continues to produce more and more. Kids can make pickles from cucumbers by adding vinegar, salt, sugar, and spices and can or refrigerate them for long term storage. Fresh cucumbers will last in the refrigerator up to two weeks when kids wrap each one separately in plastic wrap. Kids love cool organic cucumbers in salads, sandwiches, as pickles, and eating them fresh picked while standing in the garden.
