IMG_3514

Kids find they enjoy a veggie salad even more when it is served in an organic whole wheat tortilla. Kids can make a fresh organic cucumber and cherry tomato salad for a bright flavorful bite.  When kids grow and organic raised bed garden on the patio, they can pick fresh herbs, greens, cucumbers, and cherry tomatoes filled with nutrients to go into their salad. Kids can chop 1 cup tomatoes into fourths and slice 1 cup cucumber and cut the slices into fourths into a bowl. Herbs add a pop of flavor and are powerhouses of nutrients. Kids can snip a sprig of oregano, thyme, sage, basil, and cilantro with scissors and cut finely into the bowl.  Kids can make a salad dressing with 3 tbsp organic extra virgin olive oil, 1 tbsp fresh organic lemon juice, 1 tsp lemon zest, and ½ tsp sea salt. Mix the herbs, veggies, and a cup of mixed baby greens from the garden with the salad dressing. In a 350 degree oven, heat an organic whole wheat tortilla sprinkled with shredded almond mozzarella cheese for 5 minutes. Kids can put the salad on top of the tortilla and fold the ends and sides to create a delicious wrap.
