At harvest time, kids can gather so many tomatoes that they can make the most delicious tomato sauce ever. Kids can pour ¼ cup organic extra virgin olive oil in the bottom of a baking dish. Preheat the oven to 400 degrees. Wash and cut in half 18 organic Roma Tomatoes, place in the dish, and sprinkle with sea salt. On a baking pan place one organic garlic clove and ¼ cup organic red onion, sprinkle with oil and salt. Put both pans in the oven and bake for 20 minutes. Let cool. Take each tomato half and scoop the insides into a blender removing the skin, which easily falls away. Pour the tomato juice, the garlic, and the onion into the blender with a sprig of basil, oregano, and thyme and blend until smooth, adding sea salt to taste. Use the sauce for pasta, rice, pizza or other dishes. Put the sauce in a glass jar and it will keep in the refrigerator a week or freeze it to last longer.
