Kid Chef Winter Squash Sauce


When kids eat local organic in season produce from their garden, the farmer’s market, or from local farms CSA boxes, they may have an abundance of several different winter squashes. Kids may need adult help to chop the hard skinned winter squash, then peal, rough chop, and steam it. Fill the blender with the steamed squash and add ¼ cup of the squash infused steam water, sprigs of parsley, sage, oregano, and thyme, ¼ tsp sea salt, and 1 tbsp organic vegan butter. Blend until smooth. This sauce is wonderful with pasta, pizza, or rice. It will keep in the refrigerator a week or kids can freeze some for later.  To make the pizza in the picture, kids can chop organic onion, red pepper, and shiitake mushrooms and sauté them in organic extra virgin olive oil with sea salt and red pepper flakes for 5 minutes. Top the pizza with ½ cup Winter Squash Sauce and the sautéed veggies, brushing the outer crust with the remaining olive oil. Bake in 425 degree oven for 15 minutes.
