Kid Chef Quinoa Stuffed Tomato


Kids can make this delicious organic Roasted Stuffed Tomato dish for a special occasion or holiday party. Quinoa contains all the essential amino acids for a complete protein. Quinoa is a couscous-like seed that cooks up in 20 minutes and comes in various colors. Kids can cut off the top of four extra large organic tomatoes and scoop out the center. Using the roasted tomato sauce recipe,, kids can add the scooped out tomato pulp to the roasting pan with the Roma tomatoes to make the tomato sauce. Kids can chop and steam 1 small organic sweet potato, 1 carrot, ¼ cup kale, ¼ cup red pepper, ¼ cup onion, and 1 clove of garlic. Mix the steamed veggies in with the cooked quinoa and ½ cup of tomato sauce. Stuff the tomatoes with the quinoa mixture and bake at 375 degrees for 15 minutes.
