Kid Chef Fennel Potato Salad

Kids in the Mediterranean area have been eating fennel since ancient times.  Fennel is a crunchy bulb vegetable with a refreshing licorice flavor, known for its medicinal properties, rich in antioxidants, phytonutrients, vitamins, and fiber. Kids can make a delicious potato salad by steaming 1 chopped organic red potato, 1 chopped organic fennel bulb, 1/3 cup chopped organic cauliflower, 4 sliced organic crimini mushrooms, and 2 tbsp chopped organic onion. Pour the steamed veggies in a bowl and add 3 tbsp organic extra virgin olive oil, 2 tsp organic balsamic vinegar, 1 tbsp fresh parsley leaves, 1 tbsp fennel fronds, and ¼ tsp sea salt, mix and serve hot or cold.
