Kid Chef Lentil Rice Bowl


Kids can make a One Bowl Meal at home with this comforting, hearty, tasty dish with organic veggies fresh from the garden. Kids in India have been eating all colors of lentils for 10,000 years. Lentils are a super food, loaded with fiber, protein, iron, potassium, and B vitamins. The fiber in lentils gives you that full feeling with no fat, lowering cholesterol, reducing heart disease, diabetes, and overweight problems.  Lentils are thin-skinned so they cook quickly without soaking and are among the easiest of all legumes to digest. Organic lentils and organic brown rice together include all the amino acids for a complete protein.  Pour 1/3 cup organic brown rice, ½ cup of organic green lentils and 2 ½ cups of filtered water in a pot and bring to a boil. Use local organic veggies and chop 1 large red potato, 1 carrot, ¼ sweet red pepper, ½ cup spinach, 1 thick slice onion and a minced garlic clove and add to the pot. Simmer 25 minutes. Stir in 2 tablespoons vegan butter, ½ tsp salt, ½ tsp curry powder, and minced sprigs of fresh parsley, fennel fronds, oregano, and thyme from the garden and serve.
