Kid Chef Banana Nut Muffins


Kids can replace essential nutrients quickly by eating a banana after exercise. Kids love potassium rich bananas, good for muscle, bone, and skin growth. Bananas are high in vitamins, minerals, and a good source of fiber. Kids can preheat the oven to 350 degrees. In a large bowl whisk 1 ¾ cup organic whole wheat pastry flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp arrowroot starch, ½ tsp sea salt, and ½ tsp pumpkin pie spice. In a small bowl mix ½ cup organic cane sugar, 5 tbsp organic vegan butter, 1 tbsp maple syrup, organic coconut yogurt, 1 tsp vanilla, and 2 ripe mashed bananas. Kids can pour the wet ingredients into the large bowl, add ½ cup of chopped organic walnuts, and mix well. Divide the batter into 12 muffin cups lined with paper liners. Bake 25 minutes and cool before serving. Banana nut muffins are great for breakfast, snack, or kid chefs can top them with icing for a party.
