Quinoa is quick and easy to prepare by simmering ½ cup quinoa with 1 cup water for 20 minutes. Kids can use all local organic veggies and chop and steam 1 sweet potato, 1 carrot, ¼ cup peas, ¼ cup red pepper, ¼ cup red onion, and 1 clove of garlic. The flavors of peas and sweet potato (white on the inside) blend delightfully with the nutty quinoa. Preheat the oven to 350 degrees. Pour the steamed veggies into the pot of cooked quinoa.
