Quinoa is a Super Food, a plant-based source of complete protein, gluten-free, rich in fiber, antioxidants, vitamins, and minerals. Quinoa is quick and easy to prepare by simmering ½ cup quinoa with 1 cup water for 20 minutes. Kids can use all local organic veggies and chop and steam 1 sweet potato, 1 carrot, ¼ cup peas, ¼ cup red pepper, ¼ cup red onion, and 1 clove of garlic. The flavors of peas and sweet potato (white on the inside) blend delightfully with the nutty quinoa. Preheat the oven to 350 degrees. Pour the steamed veggies into the pot of cooked quinoa. Add organic vegan butter, ¼ tsp sea salt, ¼ tsp cumin, ¼ tsp cayenne pepper, and ¼ tsp curry powder. Sprinkle organic cashew cheese on white organic corn tortillas, heat in the oven for 5 minutes, and fill with the quinoa mixture. Kids can make this yummy super nutritious colorful taco in a half hour.
