Jackfruit is a large fruit, perhaps the biggest tree fruit in the world, with a sweet taste, meaty texture, and rich flavor that is great in fruit salads, curries, or sandwiches. Jackfruit is a tropical fruit that does not travel well, rich in fiber, the B-complex vitamins, and potassium. By adding black beans, kids get the protein needed to balance the dish.
Kids love these spicy jackfruit tacos. Kids can use canned jackfruit, black beans, and roasted tomatoes from Trader Joes to make a quick and easy meal. Preheat oven to 350°. Drain an 18 ounce can of jackfruit through a sieve. Use a fork or masher to pull it apart and break it into shreds. Heat 1½ tsp organic extra virgin coconut oil in a pan and add ¼ cup chopped organic sweet onion and 1 minced garlic clove. Sauté for 5 minutes until translucent. Add the shredded jackfruit, and sauté for 5 minutes. Add ⅓ – ½ cup of organic barbecue sauce, sea salt to taste, and simmer another 5 minutes, stirring often. Strain a 15.5 oz can organic black beans and a 14.5 oz can of organic roasted diced tomatoes with green chili. Mix into the jackfruit throughly, add ¼ tsp sea salt and a dash of cumin and crushed red pepper flakes, and heat. On a baking sheet place 2 organic corn tortillas for each person and sprinkle them with vegan shredded cheese. Top with the jackfruit mixture and organic lettuce to serve.
