Kid Chef Lentil Soup

Kids can make a tasty meal for fall with this hearty soup, packed with fiber, protein, iron, potassium, and B vitamins. Kids can add fresh organic veggies from the garden or the Farmers Market for even more nutrition and flavor. Lentils come in many colors and textures and are valued by cultures around the world. The fiber in lentils gives a full feeling with no fat, lowering cholesterol, reducing heart disease, diabetes, and overweight problems. 

Rinse ½ cup of organic green lentils and add them to 2 ½ cups of pure water in a pot and bring to a boil. Chop 1 organic red potato, 1 organic carrot, ½ cup organic kale, ¼ cup organic green pepper, ¼ cup organic red onion, 3 sliced mushrooms, one minced garlic clove, and one deseeded red chili and add to the pot. Simmer 30 minutes. Add ½ tsp salt and ½ tsp curry powder.
