Kids love to use Holiday baking pans to create their festive cakes. When lemons are ripe on the trees, kids can pick a couple to create cakes that are refreshing amid the rich holiday foods. This heart healthy cake is flavored with organic lemons, extra virgin olive oil, and pure organic maple syrup.
Preheat oven to 350 degrees. In a large bowl, whisk together 2 cups organic whole wheat pastry flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp arrowroot starch, ½ tsp sea salt. Kids can zest and juice 2 organic lemons. In a separate bowl, whisk together ½ cup organic extra virgin olive oil, ½ cup organic cane sugar, ¼ cup organic maple syrup, ¾ cup plain soy yogurt, ¼ cup lemon juice, and 2 – 3 tbsp lemon zest. Pour the wet mixture into the dry mixture and combine without over mixing. Grease a tree shaped cupcake baking pan or any favorite shaped baking pan with Trader Joe’s spray organic extra virgin olive oil, dust with flour, and pour in the batter. Bake for 15 minutes or until a toothpick comes out of the cake dry. Cool the cake 30 minutes before removing from the pan. Sift organic powdered sugar over the cakes and serve. Kids can also bake these cakes ahead and freeze them for a party.
