
When kids grow Swiss chard, kale, spinach, and beets in their organic raised bed garden, they can harvest the greens for a powerful boost of nutrition disguised as this comfort food dish. Garden greens contain antioxidants, iron, calcium, vitamins C, A, K, omega 3, as well as a good source of magnesium, potassium, iron, and dietary fiber. They also help prevent cancer, high blood pressure, and bone disease.
Wash 4 cups of organic greens thoroughly. Kids can cut the chard in half and remove the thick stalks and stems. Put the greens in a steamer with 1 garlic clove and cook for 5 to 10 minutes. In a sauce pan, cook 1 tbsp organic extra virgin coconut oil and 1 tbsp of organic whole wheat pastry flour. Stir in ½ cup organic plain almond milk. Remove from heat and mix ½ teaspoon sea salt, ¼ tsp cumin, ⅛ tsp coriander, and ⅛ tsp cayenne pepper. Pour the greens in a blender, mix in the sauce, and blend until smooth.
Kids can cook ½ cup organic brown rice and heat an organic wheat tortilla. Mix the rice with the creamy greens, put the greens on the tortilla, and fold the sides. Cut in half for an energy filled lunch.
