
Kids can make a healthy potato salad for their Fourth of July party. To create a flavorful potato salad and add extra nutrients, kids can cut the veggies very small and add fresh herbs from the garden. Organic red potatoes have a lower Glycemic Index than most potatoes and are particularly healthy because their skin is loaded with fiber, B vitamins, iron, and potassium.
Kids can wash and leave the skin on 4 medium red potatoes (2 ½ cups). Chop the potatoes into very small pieces and steam for 15 minutes until fork tender. Wash and chop 2 organic celery sticks into small pieces and put into a large bowl. Wash and mince one organic leek and, using the white portion of the leek stem, and add it to the bowl.
Kids can snip fresh herbs in the garden, using a small sprig of dill, rosemary, sage, oregano, and parsley. Using scissors, cut the herbs very fine. Add the herbs plus 2 tbsp chopped chives to the bowl. Mix in the steamed potatoes. Add ¼ cup organic coconut yogurt, ½ tsp organic dijon mustard, ½ tsp organic apple cider vinegar, and ½ tsp sea salt and mix thoroughly with the herbs and veggies. Kids can be proud to bring this salad to any summer party!
