
Organic whole wheat orzo is a type of pasta, shaped like long grains of rice, but with twice the protein. The cucumbers are low in calories but high in beneficial nutrients and gives the salad a nice crunch. Sun dried tomatoes are a concentrated source of vitamins and minerals with an intense flavor. Kalamata olives pair well with tomatoes and are high in anti-inflammatory oleic fatty acid, making this dish nutritious and delicious.
Kids can cook 1 cup of organic whole wheat orzo pasta according to the package directions. Wash 3 organic cucumbers, slice, and quarter them with the skins on, as the skin is rich in vitamins and minerals. Put the cucumbers in a large bowl with ¼ cup minced organic red onion, 2 tbsp finely chopped organic red pepper, 24 sliced organic kalamata olives, and ¼ cup organic sun dried tomatoes. In a small bowl, mix 6 oz organic plain coconut yogurt, 2 minced organic garlic cloves, 2 tsp fresh dill, and ½ tsp, sea salt.
Pour the cooked orzo pasta over the cucumber mix and add the yogurt dressing. This salad can be prepared ahead of time and refrigerated up to four days. Kids can make this pasta salad to take on picnics, to the beach, or for a potluck.
