Kid Chef Blueberry Tart

Fresh organic blueberries in an organic 6” frozen pie shell make an awesome summer treat! Organic blueberries are an antioxidant super food, antibacterial as well as heart and brain healthy. Kids can grow their own blueberries in pots in an acid loving potting soil mix. Kids can make organic pie shells ahead of time and freeze them or find them in the frozen food section at Whole Foods.

When making the tart, it is important to keep all the ingredients cool before putting them in the oven. Preheat the oven to 375°. In a small bowl, mix 1 cup fresh organic blueberries, ½ cup organic canned coconut milk, 1 tbsp organic cane sugar, ½ tsp arrowroot starch, and ⅛ tsp cinnamon and return to the refrigerator. When the oven is heated, pour the blueberry mix into the frozen pie shell and place on a parchment paper covered baking sheet. Bake for 50 minutes and let cool. This tasty tart is large enough to make a meal or share with a friend.
