Kid Chef Vegetable Barley Soup

Kids love this comforting organic barley soup, rich in nutrients. It’s fun and nutritious to try different whole grainsthat kids have been eating for thousands of years. Wheat, rice, and oats are so popular and available that other flavorful grains are overlooked. Organic whole grain barley is rich in fiber, niacin, selenium, copper, and phytonutrients with a nutty flavor. Adding organic garden veggies make this hearty vegetable soup a warm, comforting, satisfying meal.

Kids can make this vegan soup in a pot with 2 cups of pure water and ½ cup rinsed organic barley. Bring to a boil and add 1 cup chopped organic cauliflower, 6 sliced organic cremini mushrooms, ¼ cup chopped organic red onion, ¼ cup chopped organic green pepper, 1 minced garlic clove, 1 tbsp organic extra virgin olive oil, 1 tsp chopped fresh oregano, ½ tsp sea salt, and ½ tsp curry powder. Cover and simmer 20 minutes.
