Kid Chef Chili Bean Bowl

This power pack meal is a flavorful family favorite! Organic red kidney beans are robust, nutritious, and rich in fiber and protein and are a good source of iron and potassium. Combined with organic brown basmati rice and fresh organic veggies, this bowl provides the daily essential amino acids, vitamins and minerals.

Kids can soak 1 cup of organic red kidney beans overnight in a pot. The next day, rinse the beans, return to the pot, add 3 cups of water, and bring to a boil. Simmer the beans for 30 minutes. Add 3 chopped organic carrots, 3 chopped organic celery sticks, ½ cup chopped organic red onion, ¼ cup chopped red pepper, 2 minced organic garlic cloves, 1 minced red chili. Turn up the heat to bring the beans and veggies to a boil and then simmer for 20 – 25 minutes. Add one strained can Trader Joe’s organic tomatoes, diced and fire roasted with organic green chilies. Stir in ¾ tsp sea salt, ¼ tsp cumin, and ⅛ tsp cayenne pepper.   

Kids can serve the beans and veggies with rice and add a fresh baked organic cornbread muffin for total satisfaction in texture and flavor.
