Make a quick, easy, and nutritious soup with Pacific Organic Mushroom Broth and organic whole wheat orzo. Whole Foods brand 365 frozen 10 ounce Organic Mixed Mushrooms (sliced white, cremini, shiitake, and portobello mushrooms) are the perfect addition.
Heat 4 tbsp organic extra virgin olive oil a large soup pot. Chop 1 small organic red onion and sauté in the hot oil. Break apart and add the 10 ounces of frozen sliced mushrooms to the pot and sauté for 7 minutes until tender. Sprinkle with sea salt.
Pour 32 ounces of organic mushroom broth into the pot. Add 1 cup organic whole wheat orzo, 1 chopped organic red bell pepper and 1 chopped organic celery stalk. Cut a sprig each of fresh from the garden oregano, rosemary, thyme, and sage; mince and add to soup. Add ¼ tsp organic curry powder and ¼ tsp sea salt. Cover, bring to a boil, and simmer 20 minutes.
