Kid Chef Taco Casserole

Try this tasty casserole, using Trader Joe items from the pantry, and it will become a family favorite! Rice and beans are a perfect protein, rich in fiber, vitamins, and minerals.

Cook ½ cup organic brown rice in 1¼ cup water for 50 minutes. During the last 20 minutes, add ½ cup chopped organic red onion and ¼ cup chopped organic red bell pepper. Preheat oven to 350°. When rice is cooked, fluff with a fork and add 1 tbsp organic extra virgin olive oil and 3 tbsp Trader Joe Organic Creamy Cashew Fiesta Dip. 

In a large bowl, pour 1 drained can Trader Joe organic black beans and 1 can Trader Joe organic diced and fire roasted tomatoes with organic green chiles. Add 1 cup organic frozen corn. Stir into the mixture ¼ tsp chili powder, ¼ tsp garlic powder, ¼ tsp cumin, ¼ tsp cayenne pepper, and ½ tsp sea salt. Pour the cooked rice mixture into the bowl and mix well.

Spread the mixture evenly in a casserole dish and sprinkle the top with broken Trader Joe organic white corn tortilla chips and sprinkle with organic vegan mozzarella. Bake in the oven for 20 minutes. Serve with organic fresh slaw and roasted and battered cauliflower.
