Kid Chef Baked Organic Zucchini Fries

Kids love zucchini fries! Baking zucchinis fresh from the organic veggie garden is even more healthy and delicious. Kids can line a baking pan with parchment paper. Preheat the oven to 425°. 

The zucchini plant is attractive, fast growing, and prolific, producing fruit in 40 to 50 days, rich in fiber, vitamins, minerals, and antioxidants with skin that has phytochemicals that fight diabetes, protect the liver, and suppress coughs. Kids can plant zucchini seeds in the spring and harvest them all summer long.

Kids can wash and cut two six to seven inch zucchini into eight long slices. Pour into a medium bowl ¼ cup organic old fashioned rolled oats and ¼ cup organic bread crumbs. Pour into a second medium bowl 4 tbsp organic extra virgin olive oil, ¼ tsp sea salt, and 1 tsp finely cut, fresh from the garden herbs, such as parsley, dill, oregano, rosemary, or sage. Dip the zucchini slices into the olive oil mix. Then roll them in the crumbs and oats and place them on the prepared baking pan. Sprinkle any left over crumbs over the zucchini slices.

Bake in the oven for 25 minutes. Let cool. Organic Baked Zucchini Fries are tasty and fun as a side dish, appetizer, or snack.
