Kids can enjoy hot red lentil soup on a cold day. Lentils gives kids that full feeling with no fat, high in protein and fiber, lowering cholesterol, reducing heart disease, diabetes, and overweight issues. Red lentils cook faster than green lentils. Kid Chefs can rinse ½ cup red organic lentils thoroughly in a strainer and pour into a pot with 3 ½ cups of pure water. Using organic ingredients, add one chopped red potato, one small carrot, ¼ cup cauliflower, ¼ cup broccoli, 1/8 red pepper, a slice of onion, a garlic clove and an organic vegetable bouillon cube. Bring to a boil, turn down to low and simmer for 25 minutes. Add ¼ tsp curry powder, ¼ tsp sea salt, 1 tbsp butter, dash of cumin and cayenne pepper. This makes a warming winter afternoon snack with brain power for homework.
